Nourishing Soup

I love making a big batch of something on a Sunday to eat throughout the week. It feels like a gift I can give my future self when I have a bit more time on the weekends.
This vegetable soup recipe is super simple and so, so delicious. It packs a ton of flavor and nutrients. You can pretty much add any veggies you have on hand to it. It’s in my regular soup rotation all winter long!
